Christmas tree cookies

Baking cookies is the ultimate Christmas tradition. The kids will love helping with the rolling, cutting, and decorating. This (non-edible) version is an original alternative to traditional Christmas baubles. Our tip for a fun gifting idea!

Ingredients

For the cookies:

  • 2 eggs
  • 4 tablespoons syrup
  • 300g flour
  • 1 teaspoon baking powder
  • 1 teaspoon ginger powder
  • 1 teaspoon cinnamon
  • 100g cold butter
  • 100g light brown caster sugar
  • a pinch of salt

For the decoration:

  • 2 eggs (egg whites only)
  • 1 teaspoon lemon juice
  • 250g icing sugar
  • Decoration: seeds, silver balls, etc.

Supplies:

  • Baking paper
  • Cutting dies
  • Coloured ribbons
  • Hand mixer with dough hooks

Preparation

Step 1

Beat the eggs in a small bowl along with the syrup. Sift flour, baking powder, salt, ginger powder, cinnamon and brown sugar over a large bowl. Mix in the butter. Make a well in the centre and pour three-quarters of the egg mixture into it. Knead the mixture into a cohesive dough, either with your hands or a mixer with dough hooks. If the dough is too dry, add the rest of the egg and syrup. If it gets too sticky, add some extra flour. Cover the bowl and let the dough rest in the fridge for at least half an hour.

Step 2

Preheat the oven to 170 °C. Line the baking tray with baking paper. Dust the work surface and rolling pin with some flour. Then roll out the dough to a thickness of about 5 mm.

Step 3

Make figures in the dough using the biscuit cutters. Using a knife, place the figures at a distance from each other on the baking tray. You can knead, roll and cut the cut the excess dough again. Use a skewer to make small holes at the top of each figure. This way you can thread a ribbon through later to hang them up.

Step 4

Bake the figures in the middle of the oven until cooked. After 20 minutes they will be light brown and you can let them cool off. After about 10 minutes, carefully lift the biscuits onto a wire rack using a knife, to let them cool further.

Step 5

For the icing: take a clean bowl and beat the egg whites with the hand mixer until frothy. Add the lemon juice and then gradually the icing sugar. Keep beating until the mixture is thick and creamy.

Step 6

Decorate the figures with icing and decorations. Let the icing harden. Once dry, you can thread the ribbons through the biscuits.

Step 7

Done! You can hang the figures in the Christmas tree.
